KM’s Birthday and Margarita Cupcakes!

Kirsten and I have been friends since college.  We both moved to Greenville after graduating and started working for the same company!  We have shared many fun times together.

Kirsten was my maid of honor in our wedding!

She gave a fantastic toast that left us all in tears!

Last Saturday 25 of us went out to help Kirsten celebrate her birthday!

Birthday parties are extra fun at Mexican restaurants.  The waiters came out playing drums and singing!

They gave her a giant hat and made sure she had cool whip on her nose to celebrate!

The birthday girl wasn’t the only start of the show.  These cupcakes came in second!

They were slightly tart, somewhat sweet and a little salty, just like your favorite margarita!

Lime Margarita Cupcakes

  • 1 Cup Unsalted Butter
  • 1 1/3 Cups Sugar
  • 6 Eggs (room temperature)
  • 3 Cups Flour
  • 3 tsp. Baking Powder
  • 1 tsp Salt
  • Zest of 4 limes
  • 1/2 Cup Fresh Lime Juice
  1. Beat butter and sugar together.
  2. Add one egg at a time until all are incorporated.
  3. Add flour, baking powder and salt.  Mix well.
  4. Add the lime juice and the lime zest.  Mix until uniform.
  5. Fill 24 lined cupcake pans 2/3 full.
  6. Bake for 18 minutes at 350F.

Tequila Lime Buttercream Icing

  • 1/2 Cup Butter (room temperature)
  • 1/2 Cup Shortening
  • 5 Cups Sifted Powdered Sugar
  • 3 Tbs. Tequilla
  • 1 Tbs Lime Juice
  • Kosher Salt
  • Green Food Coloring
  1. Beat butter and shortening until smooth.
  2. Add powdered sugar, tequila and lime juice.
  3. Add food coloring and beat until evenly distributed.
  4. Spread icing on cool cupcakes.
  5. Sprinkle kosher salt on top of icing.
  6. Enjoy!
