A Perfect Morning…

I started today off like I should start everyday, with a workout and a healthy breakfast.  I was up and at the gym by 9.  I did Week 2 Day 2 of the C25K along with some extra walking on the treadmill.  I earned 5 activity points for my workout!  After working out, I came home and cooked a delicious breakfast!

Mushroom & Spinach Omelet

  • 1 Egg
  • 1/2 Cup Egg Beaters (equal to 2 eggs)
  • Handfull of Mushrooms
  • Handfull of Spinach
  • 1 Wedge of Sun-Dried Tomato & Basil Laughing Cow Cheese

All for 4 points!

4 slices of center cut bacon adds on 2 points but it was well worth it!

This may become a standard weekend breakfast.  It was very filling.

Tony and I had a busy Saturday cleaning out the kitchen cabinets.  We are going to put our house on the market in about a month so it’s time to get rid of some things and pack the extras in boxes!

We had Tony’s parents over for dinner and they just left.  After a long day of house work, I’m exhausted. Good night!
