Easy Chicken Parm…

Last night I finally got back into exercising!

I did Jillian Michaels 30 Day Shred.  It is under 30 minutes and is a great workout.  I can definitely feel it today!  Tomorrow starts the Couch to 5K running program.  I am trying to learn how to run.  I think that I can eventually like it.  It will just take time and patience.  If you are a runner, do you have any tips for a beginner that is out of shape and not athletic?

After working out, I made an easy dinner: Baked Chicken Parm over Spaghetti Squash.

Clean and season your spaghetti squash.

Bake for an hour.

Let cool and then SHRED!  It looks just like spaghetti.

Bread your chicken and bake.

Top squash with sauce and chicken.

Add a salad on the side.

Baked Chicken Parm with Spaghetti Squash

Cut and clean the spaghetti squash.  Season with olive oil, garlic, salt & pepper.  Bake for 1 hour at 400 degrees.  While the squash is baking, bread your chicken.  I used Italian bread crumbs, a little Parmesan cheese, salt & pepper.  I just tossed the chicken directly in the breadcrumbs, no egg or milk.  I sprayed the chicken with a little olive oil to help with the crispiness!  I cooked the spaghetti squash for 30 minutes and then added the chicken.  While they were baking I heated up a jar of sauce and made a salad.  Everything was ready in just over an hour.

If you haven’t tried spaghetti squash before, you should.  It is a great, healthy replacement for spaghetti.  The hardest part is getting it cut in half.  Cooking and shredding are the easy parts!
