Cheeseburger In Paradise

This recipe isn’t quite Jimmy Buffet lyric quality but it is a good one!
I made this Monday night and was skeptical if we were going to like it.  It ended up being delicious.  It reminded me of Potatoes Au Gratin with turkey added.  I made it in two small dishes so that we each had our own serving.  This is an easy after work dinner to make for a family, just adjust the measurements as needed.  You can customize the veggies depending on what you prefer.

Cheeseburger Casserole
Serves 2
Modified from Weight Watchers
  • 10 small Gold Potatoes
  • 1 Tbs Minced Garlic
  • 1 Small Onion, chopped
  • 4 Mini Sweet Peppers
  • 1 Cup Sliced Mushrooms
  • 8 oz. Lean Ground Turkey Breast
  • 1/4 tsp. Ground Cumin
  • 3 oz. Light Velveeta
  • 1/4 Cup Half & Half
  • Dash of Crushed Red Pepper
  • Salt & Pepper
  1. Preheat oven to 350ºF. Coat a small glass baking dish with cooking spray.
  2. Thinly slice potatoes and layer them in the baking dish. Bake potatoes until slightly crisp, about 15-20 minutes; remove baking dish from oven and set aside.
  3. While potatoes are baking, coat a large nonstick skillet with cooking spray and warm over medium-high heat; add garlic, onion, green pepper and mushrooms. Cook, stirring frequently, until vegetables are tender, about 7 to 10 minutes; remove to a plate, cover to keep warm and set aside. Add turkey to skillet; cook until browned, breaking up meat with a wooden spoon as it cooks, about 8 to 10 minutes. Add cooked vegetables, cumin, salt and pepper to turkey and stir to combine; spread mixture over potatoes in baking dish.
  4. In a small microwave safe bowl, combine cheese, half & half and crushed red pepper flakes; cover and microwave in 15 second increments until cheese melts.  Pour cheese over turkey.
  5. Bake for 35 minutes.
  6. Enjoy!

I cooked my mushrooms separate since Tony isn’t a huge fan.  I also cut up 5 potatoes for each small dish instead of making one large casserole.  I also added Ketchup to mine.  I’m a Pittsburgh girl so of course I put Heinz Ketchup on everything!
