Chili Mac

The last few days have been filled with exercise and delicious healthy meals!  On Friday we enjoyed a nice run/walk in the park.   Saturday we met Tony’s family at the park.  Tony spent some time playing tennis and I walked around the path with Crosby.  I didn’t get in the 3 miles that I wanted but it was definitely nice to get out and enjoy the beautiful weather with family.  Yesterday I decided to do some squats, lunges and crunches.  I could definitely feel them today!

After work Tony & I went to the gym and did some running on the treadmill.  I finished Week 4 of the C25K!  After working out, I came home and made this easy dinner.  It took about 45 minutes from the time I started until we were ready to eat.

4 Servings

  • 6 oz. raw lean ground beef
  • 1 medium onion, chopped
  • 1 can petite diced tomatoes
  • 1 1/4 cups low-sodium V8
  • 4 oz. can of chopped green chilies
  • 1.5 tsp chili powder
  • 3/4 cup uncooked whole grain pasta (macaroni or shells)
  • 1 can pinto beans, drained and rinsed
  • 1/2 cup water
  • 2% cheddar cheese
  • plain greek yogurt
  1. In a non-stick skillet, on medium-high heat, cook beef and onion until meat is browned.  Break up meat as it cooks.  Drain.
  2. To skillet add the whole can of tomatoes, V8, green chilies and chili powder; bring mixture to a boil.
  3. Stir in water, pasta and beans; return to a boil.
  4. Reduce heat, cover and simmer until macaroni is tender, about 20 minutes.
  5. Spoon into bowls, top with greek yogurt and cheese.  1 cup serving = 8 PP plus yogurt and cheese.

I topped my chili with about 1/4 cup of plain Chobani, 1/8 cup of shredded cheddar and a few dashes of red pepper.

What toppings do you like on your chili?

I used to be a sour cream fan but now I use greek yogurt.


  1. I love chili mac! I only recently discovered it! So good! I totally use Greek yogurt instead of sour cream. I don’t miss sour cream at all!

    • It was fantastic and so filling! I don’t even buy sour cream anymore, its greek yogurt all the way! I will definitely be making this more often, so easy and so good!
