Shrimp, Millet and A Great Salad

One of the recipes I planned for this week was Weight Watchers Chile-Spiced Shrimp Kabobs with Couscous.  I slightly modified the recipe and loved it!  Tony said it was definitely a keeper!

I served it along side some steamed broccoli, bean sprouts and a spinach salad.

The salad included: goat cheese, sprouts, craisins and spinach all topped with Emily’s Favorite Dressing.  This was my first time making this dressing and it was delicious.  Tony claimed this to be one of the best salads he’s ever had!  This dressing will be a staple in our kitchen from now on.  I calculated it to be about 1 PointsPlus per Tablespoon.

Thai Chile Shrimp with Toasted Millet

Thai Chile Shrimp with Toasted Millet

4 Servings, 9 Points Plus Each


  • 1 tsp. white vinegar
  • 2 Cups finely chopped scallions
  • 2 sun-dried Thai chilies, deseed and minced
  • 2 Tbs. soy sauce
  • 2 Tbs. fresh lime juice
  • 1 tsp. ground allspice
  • 1 tsp. minced garlic
  • 2 tsp. sugar
  • 1/2 tsp. dried thyme
  • 1 tsp. ground cinnamon
  • 1 1/2 tsp. salt
  • 40 medium shrimp (about 1.3 lbs)
  • 1 cup millet
  • 2.5 cups fat-free chicken broth
  • 2 Tbs. parsley


  1. Toast the dry millet in a skillet for a few minutes until it starts to pop.
  2. Bring the chicken stock to a boil and add the toasted millet.  Add parsley to mixture.
  3. Bring back up to a boil and let simmer, covered, for about 25 minutes.  All liquid should be absorbed.
  4. For shrimp marinade, combine vinegar, scallions, peppers, soy sauce, lime juice, allspice, garlic, sugar, thyme, cinnamon and salt in the bowl of a food processor; pulse until finely chopped.
  5. Pour marinade over shrimp.  Make sure they are all coated.  Set aside for 20 minutes to allow flavors to blend.
  6. Saute shrimp on med-high in a non-stick skillet until they are just cooked through, about 4 minutes per side.
  7. Serve shrimp over millet.
  8. Yields 10 shrimp and about 3/4 cup of millet per serving.
  9. Enjoy!

My dinner came in at 13 points and was worth every one!  Time to watch the Grammy’s and head to bed early.  I’ve got an early run planned tomorrow since it’s Valentine’s Day and I won’t want to run after work.  I’m starting week 4 of the C25K!
