Easy as Pi ??

I’m a chemical engineer which means I have a little nerdiness in me.  Monday was Pi Day (3.14) so of course I had to make a some sort of pie for dinner.  The only problem with making a pie for Pi Day is you need a pie pan.  All of my pie pans are packed up in moving boxes in the garage so I had to modify this “Pie” and make it in a casserole dish.

Brown the turkey and onion.

Add the mushrooms.

Mix in the cream cheese.

Add the spices.

Mix in the green beans.

Flatten the biscuits.

Mix the egg with the cottage cheese, yes it looks gross!

Top the dish with paprika and crushed red pepper.

Turkey Burger Pie

Serves 8, 7 PointsPlus per serving

  • 1.3 lbs lean ground turkey breast
  • 1 small chopped onion
  • 1 small can chopped green chilies
  • 4 oz fat free cream cheese
  • 1 bag of frozen steamed green beans
  • 1 cup sliced mushrooms
  • 10 refrigerated Pillsbury Simply Biscuits
  • 1 cup low fat cottage cheese
  • 1 tbsp. all purpose flour
  • 1/2 tsp pepper
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1 egg
  • red pepper flakes
  • ground paprika
  1. Brown turkey and onion, drain.
  2. Microwave green beans per the directions on their bag.
  3. Add mushrooms, chilies, and cream cheese to turkey.  Cook on medium until cream cheese is liquid.
  4. Stir in flour, salt, pepper and cumin.
  5. Drain green beans and add to turkey mixture.
  6. Evenly press the biscuits into an 11×13 glass dish coated with non-stick spray.  (If using a 9 inch pie pan, only use 5 biscuits.)
  7. Spread turkey mixture over dough.
  8. Combine cottage cheese and egg, mixing well.  Spread the mixture evenly over the turkey.
  9. Sprinkle mixture with paprika and red pepper flakes.
  10. Bake at 350 degrees for 35-40 minutes.
  11. Slice into 8 pieces.
  12. Enjoy!
