Watermelon Tofu Feta Salad

Remember last week when we went to A Tavola for dinner and I had that amazing salad?  Well, tonight I made the SheenBean version.

My salad may look a little different because I added tofu so that it would have protein and could be used as a main course.  Tony was hesitant when I said that we were having tofu on the salad.  The only way I have ever made tofu for him is by baking it.

After googling a few different versions of this salad, I found this recipe for the tofu marinade.  It sounded like the perfect complement to the salad I had last week.  I cut up the tofu the night before and let it marinate overnight.  You really couldn’t tell that it was tofu.  It tasted like cheese to me.  I was so surprised!

I still added feta even though you could omit that if you would just like to use the tofu as the cheese.

We liked this so much that I already packed our lunches for tomorrow with it!

Watermelon Feta Salad

Ingredients:

  • Seedless Watermelon
  • Basil
  • Red Onion
  • Feta
  • Olive Oil
  • Balsamic Vinegar
  • Tofu (Marinated)

Directions:

  • Cut up the watermelon into small cubes, store in refrigerator to keep cold.
  • Dice the onion into small pieces.
  • Chop up the basil.
  • Pour 1-1.5 Tbs of Olive Oil on the plate.
  • Add cold watermelon, 1 Tbs. feta, pinch of onion and basil on top of oil.
  • Add tofu if wanted.
  • Sprinkle 1 Tbs. of balsamic vinegar over the salad.
  • Enjoy on a hot summer night!

I added a few pieces of tofu before pouring the vinegar on.  The marinade on the tofu gave it a salty taste.  Perfect with the sweet watermelon!  I can’t wait to make this again.
