Mini Hummus BLTs

I recently received a coupon from Foodbuzz for a sample of Sabra Hummus. With the hummus I was asked to create a recipe for a cocktail party. I thought over and over about what kind of recipe I wanted to make. At one point I even contemplated making some sort of hummus dessert, yes, sweet hummus. I’m not sure how I would do that, but one day I may attempt it.

Instead of dessert, I was inspired by a recent sandwich I had, a BLT. Most BLTs have mayo on them. I’m not a mayo fan but for some reason I thought ranch flavored hummus would be good. From this point on, I was set on making some sort of ranch hummus BLTs. Knowing that this recipe needed to be for a cocktail party, I decided to make a mini version of a BLT on a stick. This recipe would be perfect to take to a Labor Day cookout this weekend. I didn’t have anything special to make these for so instead of sharing them with friends, I ended up eating 10 of them as my dinner last week. Tony and I liked them so much that we ate ALL of them in one sitting.

Only a few ingredients are needed.

Sabra Recipe

Cook the bacon on a cooling rack in a cookie sheet so the grease stays in the pan and not on the bacon!

The bacon should be nice and crispy but not burnt!

Slice off the tops of the cherry tomatoes.

Remove the insides of the tomatoes using a sharp knife.

I used a grapefruit knife and it worked perfect.

Rinse and dry the tomatoes once they are hollow.

Clean the lettuce and then cut it into 1″-2″ pieces.

If the pieces are too large, you can always fold them in half when assembling.

Add the ranch to the hummus.

Scoop the hummus into a plastic bag.

Find a small jar or lid that will cut out bread circles that are approximately 1″ in diameter. You should be able to get 4 circles from one slice of bread.

Toast the bread until slightly crisp.

After the bacon has cooled, cut it into slices that are slightly larger than the size of the bread circles.

Snip the corner off of the hummus and hold it like a pastry bag.

Fill each tomato until just full.

Place the tomatos back on the paper towel where they previously dried.

This will help them from all falling over.

You can use any type of toothpick or skewer. I found these bamboo skewers at a party store and thought they would work perfect. Slide on the tomato.

Assemble

Add a piece of bacon. Be careful because the bacon can start to fall apart when you put it on the skewer.

Add a piece of lettuce. Fold in half if it seems to be too large!

Finally add the bread.

Garnish with diced onions if you want.

Enjoy eating at least 10 for dinner!

Mini Hummus BLTs

  • 5 slices of pumpernickel bread
  • 20 cherry tomatoes
  • 1/2 cup Sabra hummus
  • 2 tsp ranch powder
  • 5 slices thick cut bacon
  • 1 head of romaine lettuce
  • toothpicks or skewers
  • diced green onions

Cook the bacon: Preheat the over to 400. Place the bacon on a cooling rack inside of a baking sheet. Bake for 20-30 minutes until the bacon is crispy. Pat the grease off and let cool. Slice into 1″ pieces.

Prep your tomatoes: Slice the top off and scoop out the insides. Rise all remaining seeds out and let dry.

Prepare lettuce: Rinse and dry the romaine lettuce leaves. Slice into approximately 1″ pieces.

Mix the humms: Add the ranch powder to the hummus. Pour the hummus into a quart size bag and refrigerate until ready.

Cut the bread: Using a lid that is around 1-2″ in diameter. Cut 20 small bread circles out of the bread. After the bacon is ready, place the bread on a separate baking sheet and back for about 5 minutes or until the bread has a slight crispiness to it.

Fill tomatoes: Snip the corner off of the plastic bag and fill each tomato with hummus until just filled, do not over fill. You don’t want the hummus overflowing over the side of the tomato.

Assemble: Slide the ingredients onto a toothpick. Hummus filled tomato, Slice of Bacon, Piece of Lettuce, Pumpernickle Round

Garnish with diced green onions.

Serve as an appetizer at your next party!
