Sweet Potato Cupcake Deliciousness…

I spent Saturday afternoon in the kitchen trying a few new recipes.

I started with Cranberry Pear Salsa from How Sweet It Is. It is a perfect appetizer for your Thanksgiving Dinner. All I had to do was chop everything up and add it to the food processor. Give it a few go’s and voila I had a delicious salsa.

It was sweet, tart and spicy all at the same time. I think I’ll add a little more jalapeno next time to give it a little more kick!

I had high expectations for this recipe. My favorite cake is Sweet Potato Cake from a restaurant in Greenville, SC called Brick Street Cafe. Tony and I like that cake so much that his parents had them (8 hours in the car) for us at our rehearsal dinner!

The recipe was for 12 regular cupcakes instead, I used my mini pan and made 48 mini cupcakes. The recipe has a graham cracker crust for the cupcakes, I made a single batch of it which was enough for about 24 minis. The ones without were just as good so it’s not necessary to make unless you want to.

Instead of the marshmallow frosting that is in the recipe, I made a basic cream cheese icing because that’s what Brick Street uses on theirs and I wanted these to be as close as possible.

1 block of cream cheese
1 Tbs vanilla
~1/2 bag of powdered sugar

I added the powder sugar slowly until I got the icing to the consistency that I wanted.

We took the salsa and the cupcakes to Tony’s cousins house for dinner on Saturday night.

The cupcakes were a huge hit with all of the kids. There were 7 kids between the ages of 1 & 5 there. At one point after dinner a few of the kids had already eaten 5 cupcakes each! I’m sure 4 of those were without their parents knowing. There were only 10 cupcakes left at the end of the night!  After most of the cupcakes were eaten, the kids started to have a dance party.  It was so much fun and absolutely hilarious.  I will bring cupcakes every time we visit as long as the kids promise to have more dance parties!

    My name is Mike Rodriguez, I was searching the web for Brick street cafe’s sweet potato pie recipe[e and came across your blog. I love their pie, it tastes like heaven to me, no other pie I’ve had comes close. Unfortunately, I don’t think the ship all the way to Miami, I was wondering if you had any thoughts on recipes that come close to their SP pie so I can make one for Christmas. Thanks so much.

    • Hi Mike. Thanks for stopping by. I have never had their Sweet Potato Pie only their cake so I don’t have a recipe to share. Keep searching and let me know if you come up with something close. I’d love to try it! Merry Christmas!
