Chicken Fajita Salads

What happened to December?  Christmas is 5 days away, how did that happen?  Just like most of you, I have been busy with holiday parties, visiting family, baking and shopping.  Between a visit to PA for a mini Christmas celebration and my family visiting twice, I haven’t had much time to share everything with you.  I didn’t host my annual Shony Christmas party like I have in the past but was able to have our small group from church over for a Christmas celebration.  I’ve been baking up a storm the last few days and will share the recipes with you this week {Don’t forget to try the recipes I posted on Sunday from last Christmas}.  First, I want to share a simple dinner recipe that I made last night.

When we are busy, Tony and I have a tendency to just grab dinner out at a restaurant instead of cooking at home.  Not only can this be expensive it typically isn’t the healthiest choice either.  I am trying to fight the urge to go out this week since I know we will have our share of holiday meals and sweets in the upcoming days. Thanks to my crock pot, we had a delicious, healthy dinner last night.

Before work, I added 2 frozen chicken breasts covered with a jar of salsa to the bowl.  I covered it and set it to low.  When I got home, the chicken just fell apart in the crock pot.  I shredded it and mixed it up with the juices that were left in the crock pot.

I picked up a few veggies on my way home.  After chopping the vegetables up, I drizzled them with olive oil and seasoned them with some taco seasoning.  I sautéed the veggies over medium heat until they were tender.  Once they were done, I assembled our salads.

It would have been better {but less nutritious} served with Romaine or Iceberg lettuce but we didn’t have any.  You could also add black beans, corn or tortilla chips to it. This chicken could be used in a variety of different ways, burrito bowls, tacos, enchiladas, etc.  We had enough chicken left to have leftovers for lunch today.

Salsa Chicken

Serves 2

Ingredients:

  • 2 Frozen Boneless Chicken Breasts
  • 1 jar of Salsa

Instructions:

Spray crock pot with non-stick spray. Place frozen chicken on bottom. Pour salsa over the chicken. Cover and set on Low for 6-8 hours. After cooking, shred chicken and add back to the crock pot to keep warm. Mix the chicken with the remaining sauce in the pot. Serve over salads or in tacos. Depending on the size of your chicken breasts, you may have more servings.
