Thanksgiving Leftovers

A few weeks ago when I was checking out at the grocery store I picked up the November copy of Cooking Light.  Inside was a recipe to use leftover turkey.  I knew I had to make this.  It sounded delicious and my family always cooks large turkeys so I knew there would be plenty of leftovers.

After our first Thanksgiving feast last week, I packed up a container of leftover turkey to bring back to Ohio to make the Thai Curry Stew with Turkey and Zucchini that was featured in the November magazine.

Green turkey curry  1Tuesday night was the first chance I had at making it.  I’ve never made homemade curry before.  Typically I use a premade curry or curry paste as my seasoning.  It was surprisingly easy to make.  Once I got the vegetables chopped up and the sauce made, I didn’t have much to do other than watch it cook and continually taste samples of it.

I served it over white basmati rice.  It was fantastic.  It made enough for 6 servings so we can have it twice this week for lunch.  I had it yesterday and think it was even better than the night before.
